Made as a traditional 'Australian blend', the Shiraz component provides fleshy fruit flavour while Cabernet Sauvignon provides a frame of fine grained tannins. Penfolds Max's Shiraz is a tribute to former Chief Winemaker Max Schubert 1948-1975, a legend in Penfolds history. Max's constant pursuit of excellence paved the way for those who followed in his footsteps and also allowed the status and heritage of Penfolds to grow. A contemporary offering of South Australian Shiraz, this release provides a fruit-driven wine which is generous in flavour and persistent across the palate.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. In the glass, it reveals a deep, dense black core with a vibrant red hue. Aromas of violets, spice, ripe blueberries, and boysenberry are layered with hints of mocha oak. The palate is rich, round, and textural, delivering juicy flavours of ripe raspberries, satsuma plums, and red currants, supported by fine cocoa-powder tannins for a soft, mouth-filling finish.

Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. Land that was once a high country sheep station is now a flourishing vineyard. Sheep and rabbits co-existed on the land for quite some time but the sheep couldn't keep up with the nocturnal activity of the rabbits, and in the end were driven off the land. Rabbits now run free on the vineyard and fuelled by high altitude Pinot Noir, some are reputed to be the size of ponies, but that's another story... The Rabbit Ranch Pinot Noir is made in a very soft, fruit forward, low tannin style - a wine to be savoured and supped, rather than an assault on the senses.

Red Knot Cabernet Sauvignon is vibrant in colour with aromas of cassis and chocolate, and a full bodied, richly structured palate of blackberry flavours subtly framed with French and American oak.
